Nijmegen sandwich

Broodje Nijmegen, also known colloquially as Nimma, is the result of a collaboration between Radboudumc, Radboud University, MVO Nederland, HAN, Compass and Vermaat. This sustainable sandwich highlights local, natural ingredients and inspires buyers and consumers to make conscious choices. With Broodje Nimma, we want to support the local economy and contribute to a more sustainable food system.

Where do the ingredients come from?

Composed by sous chef Paul Weijers of the Nieuwe Winkel in Nijmegen, the sandwich is made with local ingredients from local farmers. This tasty sandwich consists of:

  • Infused vegetables from Basic Theory Ferments

  • Watercress and salad mix from De Klispoel, they have been organic since 1975

  • Bread from Graangeluk

  • Local nuts and legs from Field4 that provide as a sustainable source of protein

  • Our mustard from Brewery de Hemel

  • Vegetable croutons from Snaqs

  • Honny Cress / Shiso from Koppert Cress

The sandwich can be found in the company restaurants of Radboudumc and Radbouwd University.

Each sandwich contributes to sustainable agriculture and ensures a fair price for the farmer. Sandwich Nimma proves that companies, farmers and consumers can take sustainable steps in a simple way.
